I just love the refreshing taste of Lime Chilli Crab and Coriander
Ingredients
- 140-150g fresh crab meat, drained and shredded
- 1 lime juiced, 30ml
- ½ tablespoon fish sauce
- ½ tablespoon coconut or palm sugar
- 1 tablespoon chopped fresh coriander
- 2 teaspoons chopped mint
- 1 small red chilli, sliced
- 1 kaffir lime leaf, finely chopped
- 2 crispy iceberg lettuce leaves
Method
- Combine lime juice, fish sauce, sugar, coriander, mint, chilli and kaffir lime leaf and stir well
- Add the crab meat and toss to combine
- Trim the lettuce leaves to an eatable size
- To make your lettuce crispy, soak them in icy cold water then drain well
- Fill the lettuce leaves with crab mixture
- Serve and enjoy
- Note: You can buy a 140g tub of crab meat at your local Coles or Woolworth supermarket
