
My granddaughter sent me this recipe, and it’s absolutely delicious! It’s packed with protein, easy to make, and bursting with flavour. Enjoy!

Ingredients
½ small unpeeled sweet potato (150g-200g)
Mince
125g mince of choice
1 tbsp chopped onion
1 clove garlic
½ tbsp. tomato paste
⅓ cup tomato salsa
⅓ cup baby spinach
Avocado mix
¼ avocado mashed
Squeeze of lime juice
2 cherry tomatoes, chopped
1 teaspoon tomato salsa
1 teaspoon chopped onion
Pinch salt
Topping
2-3 tbsp pizza cheese
1-2 tbsp sour cream
Chopped chives
Sprinkle taco seasoning
Method

Preheat air fryer or oven to 200ºC.
• Place the potato half on a lined tray and bake for 25-30 min until cooked through. The time will depend on
your oven and the size of the potato.
• Meanwhile:
• Heat a splash of oil in a frying pan, add the onion and garlic, and cook for 1-2 minutes until softened.
• Add the mince, stir and season with salt and pepper.
• Add tomato paste, tomato salsa, and spinach, stir and simmer for 20-25 minutes.
• Avocado smash
• Mash together avocado, chopped tomatoes, salsa, onion, lime juice, and a pinch of salt.
• Sweet potato boat
• Fluff the flesh of the sweet potato with a fork, careful not to break the skin, top with cooked mince and
grated cheese, and place under a hot grill until the cheese has melted. Remove from the grill.
• Place the avocado mix over the melted cheese and top with a dollop of sour cream.
• Serve and enjoy!
