Stuffed Sweet Potato Boat For One

A half stuffed sweet potato, cooked and the flesh of the potato fluffed up and topped with a savoury mince, avocado mash and topped with pizza cheese sour cream by cookingmealsforone.com

My granddaughter sent me this recipe, and it’s absolutely delicious! It’s packed with protein, easy to make, and bursting with flavour. Enjoy!

Ingredients

½ small unpeeled sweet potato (150g-200g)

Mince

125g mince of choice

1 tbsp chopped onion

1 clove garlic

½ tbsp. tomato paste

⅓ cup tomato salsa

⅓ cup baby spinach

Avocado mix

¼ avocado mashed

Squeeze of lime juice

2 cherry tomatoes, chopped

1 teaspoon tomato salsa

1 teaspoon chopped onion

Pinch salt

Topping

2-3 tbsp pizza cheese

1-2 tbsp sour cream

Chopped chives

Sprinkle taco seasoning

Method

  • Preheat air fryer or oven to 200ºC.

    Place the potato half on a lined tray and bake for 25-30 min until cooked through. The time will depend on

    your oven and the size of the potato.

    Meanwhile:

    • Heat a splash of oil in a frying pan, add the onion and garlic, and cook for 1-2 minutes until softened.

    • Add the mince, stir and season with salt and pepper.

    • Add tomato paste, tomato salsa, and spinach, stir and simmer for 20-25 minutes.

    Avocado smash

    • Mash together avocado, chopped tomatoes, salsa, onion, lime juice, and a pinch of salt.

    Sweet potato boat

    • Fluff the flesh of the sweet potato with a fork, careful not to break the skin, top with cooked mince and

    grated cheese, and place under a hot grill until the cheese has melted. Remove from the grill.

    • Place the avocado mix over the melted cheese and top with a dollop of sour cream.

    Serve and enjoy!
